We made some dairy free choc chip cookies.
Before I start I didn't create this recipe it's from a cook book I purchased a few years ago called "Edan's Kitchen"
Recipe is as follows:
125g dairy free margarine (I used nutlex but you could use coconut oil)
1 cup sugar (any type of sweetener will do even things like stevia etc)
1 egg replacement (or 1 egg)
1 1/4 cup self raising flour
1 block of dairy free chocolate, chopped
Preheat Oven To 180c. Cream dairy free margarine and sugar until light in colour. Add egg replacement and mix well. Sift in flour, stir until all mixture is moist and add chopped up chocolate. Place teaspoon sized balls on a tray lined with baking paper. Lightly press. Bake at 180c for approx 20min or until just turning germ brown.
Makes approx 3 dozen.
Tips: these cookies spread while cooking, so allow plenty of room between each ball of dough for baking.
